Buffalo Chickpea Sandwich with Easy Vegan Ranch Dressing

Very brief story about how this recipe came to be.

When I first started Chef Millan’s Organics I continued to conduct research on how to better the company. After much research I decided to reach out to a woman who owns a company that provided services similar to those I was looking to provide. She had establish relationships with top name companies. When I reached out I really did not expect anything. This woman responded to me! She wanted to meet, I was so excited and grateful. So I went and met with her at the lower Manhattan apartment/office. After a great conversation she decides she wants to put me in touch with someone who is looking to hire an educational chef. The chef’s main responsibility will be to hold cooking classes for the clients of the program. Part of the interview process was that I needed to come up with a recipe and be able to demonstrate it in person as if I was teaching the class.

After scheduling the interview, I instantly starting thinking “what can I come up with that is simple, easy to follow but delicious?” At this time I was going through a chickpea craze, eating them almost everyday. Trying new recipes. Then boom! I thought of this one dish I put together when I was hungry and wanted something quick. The thing is, a lot of the dishes I make for myself are basically ingredients that I know will go great together to make a satisfying meal. There was no recipe for this. It was all in my head. So I went to the kitchen, made this dish and recorded everything I did.

If you are wondering, the interview went well. Everyone loved the food and loved how easy it was to make. Unfortunately this interview happened right before everything started getting shut down due to the COVID-19 pandemic. Therefore, I did not get the job.

Buffalo chickpea Sandwich with Vegan Ranch Dressing

Ingredients -

Buffalo Chickpea sandwich (Makes 2 sandwiches)

  • 1 can chickpeas, drained

  • 1/3 cup red pepper, minced

  • 1 tablespoon vegan butter

  • 1-1/2 tablespoon hot sauce(to taste)

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • 4 slices toasted bread of choice

  • 1 cup mixed greens (garnish)

Vegan Ranch Dressing

  • 1 & 1/2 cup Vegan Mayo

  • 1/4 to 1/2 cup non dairy milk(oat milk preferred)

  • 1 & 1/2 teaspoon Apple Cider Vinegar (ACV)

  • 3 Garlic Cloves- Crushed

  • 1 Teaspoon dried dill or dill paste

  • 1 teaspoon onion powder

  • 1/4 teaspoon smoked paprika

  • 1/4 teaspoon black pepper

  • salt to taste

Instructions

Tip: Make Ranch dressing ahead and place in refrigerator until it’s time to plate the food

  1. For Ranch Dressing: Mix all ingredients except for milk in a bowl

  2. Add milk a little at a time to preferred consistency

  3. Store in a jar in the refrigerator, up to one week

  4. Combine chickpeas, garlic powder, paprika and salt in a bowl

  5. Smash Chickpeas lightly with fork (not too smooth, leave some bigger pieces)

  6. Add bread to toaster- Toast!

  7. Then add butter to a medium skillet/nonstick pan on medium heat

  8. to the buttered pan add minced red peppers and stir

  9. After about 1-2 min add the chickpea mixture to the pan

  10. Then add Hot sauce to the chickpeas(add more if you like the heat), stir and saute in pan for another 2-3 mins. Turn off heat

  11. To plate take bread out of toaster, put some vegan ranch on both slices, place buffalo chickpeas on bread and garnish with mixed greens.
